We prefer flour over corn tortillas but choose your favoriteCheese – Shredded or sliced, choose flavors you like- cheddar, Colby jack, etc..Other fillings as desired (chicken, pork, veg) Butter and/or oil.
Melt a little oil/butter in the fry pan. Put one tortilla down, top with cheese and other fillings and cover with the 2nd tortilla. Brush with some oil/butter and let it melt/brown. After a few minutes, flip the tortilla and brown the other side. Once both sides have browned and the cheese has melted, put it on a plate and slice for serving with some sour cream, salsa, or alongside tortilla soup!
Start with broth, (Chicken or whatever you have on hand - water if nothing else) one can of black beans – drained, one can of garbanzo beans – drained, one can/frozen bag of corn, one can of Rotel or Salsa, Chicken – Shredded/chopped (Leftover or Rotisserie works well for this) Also, any leftover meats like pork/steak/turkey work well here.
Season with cumin, red, black, or Ancho pepper, salt, garlic powder, etc to taste. Combine these in a large pot and simmer for a while. Get creative, if you have some carrots, celery, onion, other veg, chop them up and add them to the pot. If you don’t have black or garbanzo beans, use what you have! Choosing like ingredients will add to this making a great soup for your family!! Serve over tortilla chips, topped with cheese, jalapenos and/or sour cream.
Cut your favorite hot dogs into short segments a little over an inch long. Slide four uncooked spaghetti noodles through the segments leaving several inches of the hard noodle on each side. Repeat the process with several hot dogs.
Boil the hot dogs with noodles as usual. The noodles will become the eight wiggly legs of your Octopus Hot Dogs! Serve with canned or home made sauce.
